L-asparaginase (ASNase) is an aminohydrolase enzyme widely used in the pharmaceutical and food industries. Although currently its main applications are focused on treatment of lymphoproliferative disorders such as acute lymphoblastic leukemia (ALL) acrylamide reduction starch-rich foods cooked at temperatures above 100 °C, use a biosensor detection monitoring L-asparagine levels high relevance. ASNase-based biosensors promising innovative technology, mostly based colorimetric since mechanism action ASNase catalysis hydrolysis, which releases L-aspartic acid ammonium ions, promoting medium pH value change followed by color variation. biosensing systems prove their potential for ALL patients, along with concentration analysis foods, due to simplicity fast response.
